Apple & Cranberry Crumble
Serves 4-6

Cook - 25 mins
Fruit filling
5 apples (600g)
1 cup fresh cranberries (115g)
3 tbsp brown sugar/ liquid sweetener
Juice of 1/2 lemon
2 tbsp water
Splash of vanilla
Pinch salt
Crumble topping
1/2 cup oats (50g)
3/4 cup gf/plain flour (90g)
1 1/2 tbsp brown sugar (25g)
1 tbsp solid coconut oil (30g)
Pinch salt
Pinch cinnamon
Method:
Chop the apples into 2cm chunks
Add to a pot with the rest of the fruit filling ingredients and cook until soft (about 7-10 mins on a medium heat)
Add crumble ingredients to a bowl and mix with hands until ingredients are well combined and like a sweet rubble (add more or less coconut oil/flour accordingly)
Add the fruit filling to a dish and top with crumble topping
Bake at 180 °C fan/ 200 °C/ Gas mark 5, for 25 mins.
