Breakfast Hash
Breakfast Hashes are something my family all resort to for a quick and easy meal. They’re beyond delicious, a complete meal, and are perfect for using up leftover veg or whatever veg you have in your fridge…oh and perfect for sharing!
It’s a great breakfast, brunch, lunch, dinner, supper kinda meal... It’s a recipe pretty dear to my heart as my dad makes it at least once a week, using any veg we have at home, all the fresh herbs that just kick it up a notch.
You can really use any vegetables & fresh herbs you have at home, and the beauty of it is that measurements and ratios are not important! If you want to make a larger batch just up the amount of ingredients, or if you want to add less of one veg and more of another, you can do that too. It’s a dish for free spirits 😜
Just get creative with what you have & enjoy the process!
Serves-2 / Time- 20 mins
Ingredients
1/2 Onion
1/2 Sweet Potato
1/2 White Potato
1/4 cup Red Cabbage
Large handful Spinach
2 Eggs
3 Tbsp Olive oil
1/3 tsp Cinnamon
Salt & Pepper
Method
Dice all your ingredients into about 2cm cubes, or smaller if you wish
On a medium heat, sauté the onions until translucent, then add in your potatoes, and cook for about 7 minutes, or until almost cooked through
Add in your cabbage, spinach a little salt and pepper to taste, and the cinnamon, then cook through
When all the vegetables are cooked through, make 2 small wells in the mixture, add in the eggs, and crack the yolks
Lower the heat and let it cook through for a few minutes, then turn off the stove and let the residual heat finish cooking the eggs (the eggs should only take about 3-4 minutes to cook in total)
Top with a little more salt, pepper and chilli flakes (optional), and serve with bread
