Sweet Potato & Halloumi Tray Bake
For a speedy lunch or side for dinner, this one tray bake is perfect. It comes together in no more than 30 mins to give you soft and caramelised sweet potatoes, crispy & briny halloumi with a syrupy honey dressing that binds every texture and spice together perfectly.
Time: 25-30 mins / Serves 2-3
Ingredients
4 Small Sweet Potatoes (approx. 300-400g)
2 Red Onions
4 Cloves Garlic
1 Block Halloumi (225g)
1 Tbsp Ground Cumin
1 Tsp Ground Cinnamon
½ Tsp Ground Cloves
Olive Oil
Honey
Salt & Pepper
1 Lemon
Method
Preheat your oven at 230°C Fan/250°C/Gas Mark 8
Chop the sweet potatoes into ½ inch thick wedges (they will differ according to size of your sweet potato)
Chop the onions into 8ths (1 inch large chunks), roughly chop the garlic, and slice the halloumi into 1cm thick chunks
Put the veg and halloumi on a baking tray/roasting tin, and drizzle with 4tbsp olive oil, 3tbsp honey, the spices, salt & pepper
Toss together, and flatten into an even layer, then roast for 20 mins (give it a toss half way though if some parts are browning more than others)
For the Dressing- Into a bowl or small jar add the juice of the whole lemon, 3tbsp olive oil, 2tbsp honey and salt to taste
Whisk or shake it until well combined
Once the veg are browned and soft and the halloumi is crispy, they’re ready
Plate up by serving over your choice of greens (optional) and drizzling with the dressing
