Feta & Red Onion Tart with Pomegranate Glaze
Crispy, briny, tart and sweet, this tart has it all. The pastry is crispy and light & is offset by the strong cheese that softens whilst it bakes. The onion ribbons are so thin that they caramelise & are complemented by the sharp yet sweet pomegranate glaze.
It makes an excellent lunch with a side salad (or just as is), or can be enjoyed as an appetiser.

Ingredients
1 Roll Puff Pastry
1 Red Onion
1 Block/200g Feta Cheese
4tbsp Pomegranate Molasses
4tbsp Honey
1 Egg (optional for egg wash)
Splash of milk (optional for egg wash)
Method
Preheat the oven to 180°C/according to the instructions on the puff pastry packet
Thinly slice the red onion & pat dry the block of feta using a kitchen towel
Unroll the puff pastry and place it on a large baking tray lined with baking paper
Sprinkle on the onions, and crumble on the feta, leaving a 1 inch border around the edges
Crack the egg into a small bowl, add in a splash of milk and whisk
Brush the border of the pastry with the egg wash (this is optional, but I like the glossy & golden finish it gives)
Place in the oven for 17-20 mins, or until the edges are golden, and the feta cheese has also started to pick up some colour
Whilst the pastry bakes, mix together the pomegranate molasses & honey to make the glaze
Once the tart is out of the oven, drizzle it with your pomegranate glaze & serve
